About this tour
Spend three hours at a Provençal baking studio learning to shape, proof and bake croissants from scratch alongside a local chef. Based in central Aix-en-Provence, this small-group class strips away pretension—you'll work with proper ingredients and techniques, then eat what you've made. Walk out with your own batch and a recipe booklet to recreate them at home.

What to expect
You'll arrive at the studio and tie on an apron. The chef walks you through laminating dough—folding butter into pastry—then shaping croissants. Expect flour on your hands and the smell of yeast. The group works at a relaxed pace; this isn't a race. Once shaped, your croissants go into the oven. While they bake, you'll taste samples and chat over coffee or tea. You'll take home your own warm batch and a printed recipe so you can repeat it.
