What to expect
Arrive early for coffee and pastries, then move into the working bakery. It's warm, flour-dusted, and smells intensely of yeast and butter — nothing polished or staged. You'll stand at the counter with the bakers themselves: folding croissant dough, shaping batards, scoring loaves. They'll correct your technique without fussing. You're learning their rhythm, their pressure, their timing. After an hour or so of handling dough, your pieces go into the oven. While they bake, you'll walk through the bakery and understand the equipment, the overnight prep, the maths of fermentation. Then you collect your still-warm baguette in a paper bag.
Good to know
Arrive 10–15 minutes early. Wear clothes you don't mind flouring. The bakery is near République and Bastille metro stations. Children must be supervised by an adult. Prams are fine in the retail space but you'll need to manage them in the production area. No hotel transfers included.
